We Italians, generally, have our coffee of the day … ehm …our many coffees of the day quickly, standing at the bar!
When ordering your coffee in Italy, you don’t need to specify many “settings”, you just ask for “un caffè”. 'Espresso' is the default kind and single is the default dose: a single espresso simply is “un caffè”.
If it's an airport, a station bar or a tourist place, you should generally pay your coffee before. Then, when the barista asks for the "scontrino", just give him/her your ticket!
