When ordering your coffee in Italy, you don’t need to specify many “settings”, you just ask for “un caffè”. 'Espresso' is the default kind and single is the default dose: a single espresso simply is “un caffè”.
If it's an airport, a station bar or a tourist place, you should generally pay your coffee before. Then, when the barista asks for the "scontrino", just give him/her your ticket!
